Pretzel Buns

How to make a pretzel bun......

1. Make dough (of course). I used a recipe I found online. They are all pretty similar. Pretzel dough should be a little stiff and not sticky at all, but still workable. If the dough is too soft the buns just raise out and not up.

2. Knead Dough ( I knead mostly in my bosch mixer)

3. Let Dough Raise in a Bowl (about 1-2 hr.)

4. Shape in 2oz. balls (yes I weigh them out) Put on GREASED wax paper.

5. Let dough balls raise in shape for a least 30 minutes.

6. Fill a pan with water, 1/4c. baking soda, 1T. sugar. Bring to a raging boil.

7. Boil each roll for 30 seconds on each side. This step is important. It is what give the pretzel buns their chewy texture on the outside. The longer you boil them the chewier the outside.

8. Cut slits (about 1/4") in the tops with the sharpest knife you have. I found a razor blade worked the best. The outside are tough at this point, so the dough is hard to cut without smashing it.

9. Sprinkle with salt. I use kosher salt.

Side note: The wrinkles will come out in the oven.

10. Bake @425 for about 20 minutes. You want them dark.

11. Let cool. Enjoy!!!! Great plain, or with butter, or they make awesome sandwiches.
